Recipe: Betty's Guac...Mmm Mmm Good!

My love for guacamole started when I moved to San Diego to be with Ryan!  Growing up, my family always had taco nights, but guacamole was never part of that.  I recently found out that is absence was because my family isn't too fond of avocados.  To be honest, they consider them slimy.  Either way, I love guacamole and have been experimenting with it for about a year now.  To date, the recipe below is my most successful creation (according to my female coworkers, and believe me, they know their food)!



Ingredients:
4 Avocados (soft to the touch)
½ Medium Red Onion
1 Can of Chipotle corn, Mexi corn or Fiesta corn (Chipotle is my favorite)
1 Medium Tomato
1 Clove of Garlic
1 tsp +/- Salt
1 tsp +/- Pepper
Directions:
Place avocados in refrigerator
Chop the onion in little cubes
De-seed tomato and chip into little cubes
Rinse the corn
Crush the garlic
Add Salt and pepper to taste
Mix above ingredients together and place in refrigerator
Slice/mash avocados into the mixture and serve chilled

Serve with chips, tacos, etc.

  1. Okay, love, I'm TOTALLY gonna try this sometime! I may have to fight Ross (he's usually the guac-maker) so I can add the onion... but I'd never even THOUGHT of corn, much less CHIPOTLE corn (hoping I can find it)! My stomach is grumbling so hard right now....

  2. The corn makes all the difference! It is glorious! And tell Ross you can't taste the onions. You should try to sneak them into things because onions work wonders!!

  3. I think if I chop them fine enough and make sure to really layer on the garlic and avocado, he won't mind too much. Should I be able to find this chipotle corn in pretty much any grocery store?

  4. That should work. I don't even taste the onions (especially since they are red), so they can't be that strong. I found the chipotle corn in the canned corn aisle at my local food store, so you should be able to find it. If not, you should be able to find the Mexi-corn or Fiesta corn no problem.

  5. I decided to do this! I was at the grocery store looking for red curry paste, bound and determined not to buy anything BUT red curry. I was weak and broke down. Got some avocados, turned down the onion 'cos I was being cheap, and unfortunately could not find CHIPOTLE corn. Found Mexicorn and grabbed some chipotle salsa in hopes of making up for forgetting a tomato and not finding chipotle corn. I'll let you know how it goes! Everything's chilling right now. SO EXCITED!
